In a skillet over medium heat, cook the ground sausage until fully browned and crumbly. Break it up as it cooks. Add garlic powder, onion powder, black pepper, and red pepper flakes. Stir to combine. Once cooked, drain any excess fat and let the sausage cool slightly. Then mix in the shredded cheese. Set aside.
Step 2: Prepare the Puff Pastry
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Lightly flour your surface and unfold one puff pastry sheet. Roll it out slightly to smooth the creases and make a uniform rectangle. Cut into 6 equal rectangles (or 9 if you prefer smaller bites). Repeat with the second sheet.
Step 3: Assemble the Pastries
Spoon 1–2 tablespoons of the sausage and cheese filling onto the center of half of the rectangles, leaving a small border around the edges.
Brush the edges lightly with beaten egg, then place a second rectangle on top to seal. Use a fork to crimp the edges and ensure a tight seal. Repeat for all pieces.
