How to Make It
Step 1: Prep the Cabbage

Slice the cabbage thinly.

Dice the onion and mince the garlic.
Step 2: Sauté the Veggies

Heat the oil in a large skillet over medium heat.

Add the onion and cook for 3–4 minutes, until soft and translucent.

Stir in the garlic and cook for another 30 seconds, just until fragrant.

Add the sliced cabbage and season with salt, pepper, paprika, and turmeric.
Secret Tip:
Don’t stir constantly! Let the cabbage sit for a minute or two so it caramelizes lightly — that’s what gives it its rich, “meaty” flavor.
Step 3: Simmer and Finish

Reduce the heat to low, cover the pan, and cook for 10–15 minutes, stirring occasionally until the cabbage is tender but not mushy.

Add soy sauce, vinegar or lemon juice, and chili powder (if using). Taste and adjust seasoning.
Serving Ideas
Serve warm with fresh herbs sprinkled on top. It’s amazing on its own, or you can pair it with rice, mashed potatoes, or crusty bread.
For an extra crunch, top it with toasted nuts or seeds — or even crispy croutons.
